Ingredients

  • 4 cups cauliflower, chopped in a food processor
  • 2 large brown onions, minced
  • 6 garlic cloves 1 cup fresh cilantro/coriander leaves, chopped
  • 1 cup fresh parsley, minced
  • 2 large organic eggs
  • 1½ cups almond flour
  • 3 tablespoons arrowroot flour
  • 3 tablespoons ground cumin
  • 1 teaspoon red chilli powder
  • 1 teaspoon ground turmeric
  • 2 teaspoons sea salt
  • 5 tablespoons olive oil

For the Sauce:

  • 1 cup paleo mayonnaise
  • ½ cup fresh cilantro/coriander leaves
  • 1 garlic clove
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons water
  • 2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper

Instructions

  • Preheat the oven to 200 C / 400 F. Line a large baking sheet with parchment paper.
  • For patties: in a food processor, add all ingredients except olive oil and pulse until well combined.
  • Make 11 equal sized balls from mixture.
  • Coat each ball with oil evenly and then, press into a ½-inch thick patty.
  • Arrange the patties onto prepared baking sheet in a single layer.
  • Bake for about 20-30 minutes or until crisp.
  • Carefully, flip the patties and bake for about 15 minutes more.
  • Meanwhile, for sauce: in a food processor, add all ingredients and pulse until smooth.
  • Remove the patties from oven and serve warm alongside the sauce.

Notes

Remember to shape the mixture into patties with slightly wet hands.
