Ingredients

  • 2 organic egg whites
  • ¼ cup organic maple syrup
  • 2 teaspoons organic vanilla extract
  • ¾ cup organic coconut palm sugar
  • 3 teaspoons ground cinnamon
  • 1 teaspoon sea salt 4 cups raw almonds

Instructions

  • Preheat the oven to 250 degrees F. Line a large baking sheet with a greased parchment paper.
  • In a bowl, add the coconut palm sugar, cinnamon and salt and mix well.
  • In another bowl, add the egg whites and beat until frothy.
  • Add the maple syrup and vanilla extract and beat until the mixture becomes creamy.
  • Gently, fold in the almonds.
  • Slowly, add the cinnamon mixture and gently, stir to combine.
  • Place the almonds in onto the prepared baking sheet in a single layer.
  • Bake for about 1¼ hours, stirring after every 20 minutes.
  • Remove from oven and keep aside to cool completely before serving.

Notes

After turning off the oven, leave the almonds inside to cool for extra crispness and crunch.
