Ingredients

  • ⅓ cup pecans (chopped)
  • 1 tsp vanilla extract
  • 3 ½ tbsp melted coconut oil
  • 1 cup pumpkin puree
  • 3 eggs, beaten
  • ½ tbsp pumpkin pie spice
  • ¼ tsp sea salt
  • 1 tsp baking soda
  • ¾ cup almond flour
  • ¾ cup coconut flour
  • ¼ cup organic honey

Instructions

  • Grease a 10 x muffin tin. Preheat oven to 180°C / 350°F.
  • In a medium or large-sized bowl, mix the almond flour, coconut flour, baking soda, sea salt and pumpkin spice together.
  • Add honey, eggs, vanilla, coconut oil and pumpkin to the mix and stir well.
  • Spoon the mix into the muffin tin.
  • Top with as many chopped pecans as you want and add some pumpkin spice.
  • Bake for 25 minutes or less. Make sure to check when reaching the 18-minute mark and check if a toothpick comes out clean. See if you need it to bake for 5 minutes or more.
  • Cool on a wire rack before serving.
