Ingredients

  • 4 eggs
  • ½ cup pumpkin puree (fresh or canned)
  • ½ mashed banana ½ chopped banana (topping, optional)
  • 1 tsp pure vanilla extract
  • ¼ tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tbsps coconut oil 2 tbsps pure maple syrup (topping, optional)

Instructions

  • In a bowl, whisk the eggs until well blended.
  • Add in the pumpkin puree, whisk or blend together and then add in the mashed banana until the ingredients are mixed evenly.
  • Add in the vanilla extract as you go.
  • Sift cinnamon, baking soda and pumpkin pie spice to the wet ingredients. Mix again.
  • Prepare a medium or large non-stick pan to fry the pancakes in. Grease or spread a thin layer of coconut oil to the pan and heat for 3 minutes.
  • Scoop a large spoonful of batter and pour it in the pan. Depending on the size of your pan, you can cook 2-3 small pancakes together.
  • Fry each side for 3-4 minutes or until the color becomes golden brown.
  • Serve topped with chopped bananas and a dollop of pure maple syrup. Enjoy!
