Ingredients

  • 3 tablespoons coconut flour, sifted
  • Salt, to taste
  • 6 large organic eggs
  • 1 cup unsweetened almond milk
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons coconut oil, for cooking

Instructions

  • In a bowl, mix together flour and salt.
  • In another bowl, add eggs, milk and melted coconut oil and beat till well combined.
  • Add egg mixture in the bowl of flour mixture and mix till well combined.
  • In a crepe pan or a nonstick skillet, heat 1 tablespoon of oil over medium-high heat.
  • Place ΒΌ cup of mixture in pan and immediately tilt the to spread in a thin circle.
  • Cook for about 1 minute. Carefully flip the side and cook for about 15 seconds.
  • Repeat with the remaining mixture.

Notes

You can dress up these crepes with sweet or savory topping of your choice as well.
